Killer Brownie® Stuffed Cookie Mousse Cups

Cookie cups + slivered brownies = brookie cups! These easy-to-craft cookie cups are layered with decadent, gourmet Killer Brownies® and rich chocolate mousse. 

SERVINGS: 16

INGREDIENTS

1 roll of ready-to-bake sugar cookie dough
2 packages of Killer Brownie Brookie® 8-count bites
1 ½ cups heavy whipping cream
¼ cup cocoa powder
½ cup powdered sugar
Raspberries for garnish

INSTRUCTIONS

  1. Cut sugar cookie dough roll into 1/16” slices

  2. Press into bottom half of silicone large muffin pan mold

  3. Cook according to packaging, careful not to overbake

  4. Cookies will puff up while baking, once golden brown, use the back of a spoon to reshape the cookies into a cup shape inside the mold

  5. Chill in refrigerator for one hour

  6. Chocolate Mousse

  7. Whip the cream in a chilled mixing bowl

  8. Next, add cocoa powder and sugar, whip until soft peaks form, careful not to overmix

  9. Refrigerate until ready to use

  11. Slice one Brookie bite lengthwise into four slivers

  12. Cut one Brookie bite diagonally across the top to form two triangles

  13. Once cookie cups are fully chilled, remove from refrigerator

  14. Remove cups from the silicone mold

  15. Line one cookie cup with four slivers of brownie

  16. Spoon in chocolate mousse til just overflowing

  17. Add brownie triangles on top

  18. Garnish with one raspberry

  19. Repeat with remaining cookie cups
